
Using a stable Rice you can make this delicious meal. Cheap and easy, add cream or ice cream for a complete dessert, or enjoy on its own for a tasty treat.

1/2 cup (60g) Butter/ Margarine

900ml Whole or Skim Milk, (approx. 3 1/2 cups and 1 tablespoon)

3 cups of cooked rice

2 cups of warm water, from the tap is fine.

2 Tablespoons of brown sugar, firmly packed

1 Teaspoon of vanilla essence (imitation is fine)

Melt butter/ margarine and mix with milk in a casserole dish

Add cooked rice and stir well, allow to sit for about 15 minutes while preheating the oven to the lowest temp you can go - mine has 120C, the book it adapted this from said 95C.

While the oven is preheating, Place the water into a small saucepan, on low heat, and add brown sugar - stir together until the sugar is totally dissolved, stop stirring and watch the pan until the mixture starts to boil rapidly.

Take off the heat and stir in vanilla essence, pour in to rice mixture and stir well.

Place into the oven, for 2 1/2 hours, no need to watch or stir.

When the time is up, crank the oven to 180C for about 10-15 minutes, to add a crispy coating. Sprinkle a little nutmeg or cinnamon on top for garnish if you want. Serve
